This recipe is so easy and a great quick use for bananas that are over-ripe. Mom tried it for the first time the morning after we brought Elena home from the hospital. I was exhausted and starving because of giving birth and nursing, and they were so delicious. I've been making them ever since and almost have the recipe memorized.
3 or 4 large ripe bananas, mashed (I tend to use 4 if I can)
1/2 cup white sugar
1 slightly beaten egg
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour
Preheat the oven to 350 degrees. Mix the mashed banana, sugar, egg, and butter together. Set aside. In a separate bowl, mix together the baking soda, powder, salt, and flour. Mix wet and dry ingredients together. Pour into greased muffin tins, and bake for approximately 20 minutes.
